Cuisine

Main article: Andhra cuisine

Hyderabad biryani served with other Indian dishes

The cuisine of Andhra Pradesh is one of the spiciest of all Indian cuisines. There are many variations to the Andhra cuisine (all involving rice) depending on geographical regions, caste, and traditions. Pickles and chutneys, called pachchadi in Telugu, are particularly popular in Andhra Pradesh and many varieties of pickles and chutneys are unique to the State. Chutneys are made from practically every vegetable including tomatoes, brinjals (eggplant), and roselle (Gongura). Avakaya (mango) is probably the best known of the Andhra pickles.

Rice is the staple food and is used in a wide variety of ways. Typically, rice is either boiled and eaten with curry, or made into a batter for use in a crepe-like dish called attu (pesarattu is made of a mixture of this batter and mung beans) or dosas, a crepe filled with black beans or lentils.

Meat, vegetables and greens are prepared with different spices (masala) into a variety of strongly flavored dishes such as Nellore fish curry, mango brinzal curry, and Gunturu Gongura pachadi. Hyderabadi cuisine is influenced by the Muslims who arrived in Telangana in the 14th century. Much of the cuisine revolves around meat. It is rich and aromatic, with a liberal use of exotic spices and ghee (clarified butter). Lamb, chicken, and fish are the most widely used meats in the

non-vegetarian dishes. Biriyani is perhaps the most distinctive and popular dish of Hyderabadi cuisine.

Simhachalam is another popular pilgrimage site of national importance located on a hill 20 kilometres (12 mi) north of the Visakhapatnam city centre. Srisailam temple in Kurnool district is a very famous Shiva temple, and is one of the twelve Jyotirlinga shrines. Lord Rama himself installed the Sahasralinga, while the Pandavas lodged the Panchapandava lingas in the temple courtyard. The Skanda Purana, an ancient religious text, has a chapter called "Srisaila Kandam" dedicated to this temple, which points to its ancient origin. It is said that Adi Shankara (c. 788-821 CE) visited this temple at the time that he composed his Sivananda Lahiri. Srisailam is located in Kurnool district.

Hyderabad

Royal, rustic, romantic are just a few terms to describe Hyderabad, but one has to be present here to truly experience the exotic enchantment of this historic city.

The piercing calls of the muezzins from the minarets of mosques. The peal of temple bells accompanied by smells of incense. The mesmerizing fragrance of musky Attars (perfumes). Appetizing aromas from Tandoors (ovens), Dekchis (huge pots) and brewing Irani Chai (tea).

Teeming crowds flowing in and out of twisting, narrow by lanes. Hyderabad, the vibrant rainbow of cultures and potpourri of faiths, is unique and glorious.

Hyderabad - the territory of the richest man in the world, the Nizam, is also rich in history, arts, architecture and culture. Like the Kohinoor diamond which was mined here, the city is multi-faceted and a shining example of valued traditions. More than 400 years of history is preserved and exists along with the ultra modern infrastructure. Known as the City of Pearls, it is now globally famous as an IT hub. Enigmatic, vibrant and alluring, Hyderabad has a mystic charm attached to the various historic monuments, mosques, minarets and museums, which abound here.

Founded in 1591, the history of Hyderabad is rooted in romance. Mohammed Quli Qutub Shah of the Qutub Shahi dynasty fell in love with Bhagyamati, a Banjara (tribal) girl and married her. Initially the city was called Bhagyanagar, but after her conversion to Islam she became Hyder Mahal, hence the present name Hyderabad.

The Qutub Shahi kingdom, which took over the rule of Hyderabad (1512) from the Bahamani kings, was followed by the Mughal rule (1687) under Aurangazeeb. After the fall of the Mughal

Page 7: Andhra Pradesh

Empire, the Asaf Jahi kingdom came into power under Asaf Jahi who established the Nizam lineage. By this, the power of the Deccan kingdom grew in strength and area. The Nizams became amongst the richest rulers in the world. The different dynasties along with British influence added variety to the culture and cuisine of the region.

To the modern tourist, Hyderabad offers unrivalled excitement and excellent entertainment that includes Heritage, Nature, Wildlife, Cultural and Shopping sites. A seamless 360 degrees of activity makes time fly yet the aura of timelessness lends tranquility to the ambience.

The hospitality at Hyderabad is unmatched and the laid-back "Nawabi" style of living is totally relaxing. The range of yummy foods, the availability of various types of accommodation, the plethora of places to visit, astounding and affordable shopping options offering pearls, gems, handicrafts, fabrics, garments, branded merchandise and the different colours of culture & festivals make Hyderabad one of the most memorable tourist destinations.

The city of smiles, of lights, of a thousand faces, endearingly called the Pearl City, Hyderabad offers a variety of tourist attractions ranging from Heritage monuments, Lakes and Parks, Gardens and Resorts, Museums to delectable cuisine and a delightful shopping experience. To the traveller, Hyderabad offers a fascinating panorama of the past, with a richly mixed cultural and historical tradition spanning 400 colourful years. Some of the tourist attractions include...

Turipati

INTRODUCTION

The town of Tirupati is one of the most ancient and sacred pilgrimage spots in India. The name 'Tirupati' means the "Lord of Lakshmi," and should have been applied to the village on the Venkat hill, the dwelling of Lord Venkateswara. However, Tirupati is the town and transport hub at the bottom of the hill. The hill near the temple is called 'Tirumala' or the "sacred hill." The temple here is said to be the busiest in the world, eclipsing even Rome, Jerusalem and Mecca in the number of pilgrims visiting it. Tirupati is located at a distance of about 525 km from Hyderabad. Situated at the southern edge of the Eastern ghats in Andhra Pradesh, Tirupati, is surrounded by seven picturesque hills, which have perennial water falls, forests and superb views of valleys.

While Tirupati is the town at the foot of the seven hills, Tirumala is the temple township located on top of the hills. The age old temple of Lord Sri Venkateswara located here, is considered to be the richest temple in the whole world... The outer walls of the sanctum sanctorum of the temple are covered in a sheet of pure glittering gold... what a splendid sight to behold! The drive up the winding ghat road is a delightful experience as you get to enjoy fresh air and some

breathtaking views. Now, Tirupati is a great holiday destination and pilgrimage center, thanks to its serene beauty and the facilities available.

Horsley Hills is a scenic hill-station at about 150 km from Tirupati. Here you can enjoy some great adventure sports, or just sit back and relax amidst the clouds. LOCATION

Tirumala is in the extreme southeast of the southern state of Andhra Pradesh. It is situated in the Chittoor district of the state. The Tirumala Hill is 3200 ft above sea level, and is about 10.33 sq miles in area. It comprises seven peaks, representing the seven hoods of Adisesha, thus earning the name Seshachalam. The seven peaks are called Seshadri, Neeladri, Garudadri, Anjanadri, Vrishabhadri, Narayanadri and Venkatadri. Tirupati is 137 km from Chennai, 258 km from Bangalore, and 562 km from Hyderabad (via Kurnool and Cuddapah).

HISTORY

All the great dynasties of rulers of the southern peninsula have paid homage to Lord Sri Venkateswara in this ancient shrine. The Pallavas of Kancheepuram (9th century AD), the Cholas of Thanjavur (a century later), the Pandyas of Madurai, and the kings and chieftains of Vijaynagar (14th-15th century AD) were devotees of this shrine.

It was during the rule of the Vijaynagar dynasty that the contributions to the temple increased. Krishnadevaraya had statues of himself and his consorts installed at the portals of the temple, and these statues can be seen to this day. There is also a statue of Venkatapati Raya in the main temple. The Maratha general, Raghoji Bhonsle visited the temple and set up a permanent endowment for the conduct of worship in the temple. He also presented valuable jewels to the Lord, including a large emerald that is still preserved in a box named after the general. Among the later rulers who have endowed large amounts are the rulers of Mysore and Gadwal.

In AD 1843, the administration of the shrine of Sri Venkateswara and a number of estates were entrusted to Sri Seva Dossji of the Hatiramji Mutt at Tirumala, and the temple remained under the administration of the Mahants for nearly a century, until AD 1933.

Page 15: Andhra Pradesh

In 1933, the Madras Legislature passed a special act, which empowered the Tirumala Tirupati Devasthanams (TTD) Committee to control and administer a fixed group of temples in the Tirumala-Tirupati area, through a Commissioner appointed by the Government of Madras. In 1951, the Act of 1933 was replaced by an enactment whereby the administration of TTD was entrusted to a Board of Trustees, and the Government appointed an Executive Officer.

TOURISTS ATTRACTIONS

The ancient and sacred temple of Sri Venkateswara is located on the seventh peak, Venkatachala of the Tirupati Hills, and lies on the southern banks of Sri Swami Pushkarini. Lord Venkateswara is also called the Lord of the Seven Hills. The benefits acquired by a pilgrimage to Venkatachala are mentioned in Rig Veda and Asthadasa Puranas. Here, Sri Venkateswara is described as the great bestower of boons. There are several legends associated with the manifestation of the Lord at Tirumala. The temple has its origins in Vaishnavism. The sanctum sanctorum, which houses the awe-inspiring idol of the Lord of the Seven Hills, is situated in the main temple complex of Tirumala.

Sri Varahaswami Temple in Tirumala is to the north of the Sri Venkateswara temple, on the banks of Swami Pushkarini. According to legend, Tirumala was originally the Adi Varaha Kshetra or the place belonging to Sri Adi Varahaswami. Lord Sri Venkateswara took up residence here, with the permission of Sri Varahaswami. According to Brahma Purana, naivedyam (food offered to God) should first be

offered to Sri Varahaswami. Pilgrims should visit Sri Varahaswami temple before Sri Venkateswara temple. The idol of Sri Varahaswami in Tirumala is that of Adi Varaha.

Sri Anjaneyaswami Temple is located opposite the Sri Varahaswami temple on the northeastern banks of the Swami Pushkarini. It was constructed during the Mahant's period. The idol's hands are joined in supplication (in the Anjali posture). Sri Anjaneyaswami is believed to be a bestower of boons and a protector from all evils.

Swami Pushkarini, believed to be a pleasure tank of Lord Vishnu in Vaikuntham, is adjacent to the Sri Venkateswara temple. LOCATION

Located in the southwestern parts of the southern state of Andhra Pradesh, Puttaparthi is surrounded by the arid and rocky hills bordering Karnataka. It is the seat of Prasanthi Nilayam, the ashram of Sai Baba. Sai Baba resides here from July to March.

HISTORY

Satyanarayana Raju was born on November 23, 1926 in Puttaparthi, an obscure village in the erstwhile Madras Presidency. He is said to have shown prodigious talents and unusual purity and compassion from an early age. His apparently supernatural abilities initially caused some concern to his family, who took him to Vedic doctors, eventually to be exorcised. Having been pronounced to be possessed by the divine rather than the diabolical, at the age of fourteen he calmly announced that he was the new incarnation of Sai Baba, a saint from Shirdi in Maharashtra who died eight years before Satya was born.

Gradually his fame spread, and a large group of followers grew. In 1950, the ashram was inaugurated and a decade later Sai Baba was attracting international attention. Through his miraculous powers, including the ability to materialize vibhuti or the sacred ash, with curative properties, Sai Baba has millions of devotees worldwide, a considerable number of who turn out for his birthday celebrations in Puttaparthi, where he delivers a message to his devotees.

TOURISTS ATTRACTIONS

The ashram itself is a huge complex with room for thousands, with canteens, shops, a museum and library, and a vast assembly hall where Sai Baba gives darshan twice daily (6.45-7.00 AM and 3.45-4.00 PM). Queues start more than an hour before the appointed time, and a lottery decides who gets to sit near the front.

Page 21: Andhra Pradesh

One of the oft-visited locations in the ashram is the museum, perched on a nearby hillock. The museum contains models of various temple structures including the Golden Temple of Amritsar, the Mecca mosque, etc. The story of Satya Sai Baba, right from his birth to the time he attained Nirvana, are also depicted in the form of pictures. The museum is open daily from 10 AM to 12 noon. It contains a detailed, fascinating display on the major faiths with illustrations and quotations from their sacred texts, punctuated by Sai Baba's comments. Within the campus of the ashram, there is a sophisticated planetarium as well.

The Sri Satya Sai Institute of Higher Medical Sciences became operational in November 1991. Within a period of four years, it had performed 4,250 heart surgeries. The interesting part of the institute is that it runs its services free of charge, irrespective of caste, creed, nationality, and status. This institute is fast becoming a leading center for cardiac surgery, interventional cardiology and sophisticated diagnostic and therapeutic methodologies for diseases of the heart, and is ably supported by a team of dedicated cardiac surgeons, cardiologists, anesthetists and technical staff. The support facilities include a central sterilization department, blood bank, clinical laboratories, diet kitchen, laundry and central stores among others. In order to ensure a constant supply of skilled personnel and to provide worthy vocational training, a nursing school was also established in September 1992. The institute has an uro-nephrology department, ophthalmology department, x-ray unit, blood bank, total body-scanning unit, and vitreoretinal services cell.

Sai Baba founded the Sri Satya Sai Institute of Higher Learning on November 22, 1981. An autonomous body, it has been recognized by the Ministry of Education, Government of India, and the University Grants Commission (UGC) as a deemed university. To effectively mold a student's personality, hostel living has been made compulsory and patterned in the ancient gurukula style.
