One pot tender chicken with rice ဆနႏင ၾကကသား
Adapted from a recipe published on www.Martha Stewart.com, this is a dish that can be adapted to suit different flavours.
Method l Turn the stove on to medium heat and put a large frying pan or casserole pan on
the stove to warm. There is no need to add oil.
l Add the chicken, skin side down to brown. Turn after about 5 minutes.
l Remove the chicken and put on a plate nearby.
l Pour in 1 tbsp olive oil and fry the onion, garlic and carrot for about 3 minutes.
l Add the chard stalks and fry for about 2 minutes.
l Add the rice and stir for about 1 minute.
l Pour in the stock and chard or spinach leaves and stir again. Bring to the boil, then turn down to a simmer.
l Add the chicken, skin side up on top of the rice.
l Put on the lid and cook for about 25 minutes, until the chicken is cooked and the rice is tender.
l Add lemon juice, salt and pepper and fresh chopped parsley. Stir again and serve.
