Food Wages as a percentage to Food Sales
• Top 25% of Hotels achieved an average of 30%• Average of Hotels achieved 36%• Bottom 25% of Hotels achieved an average of 42%
Operational Trends
Increase in operational costs
• Total operating costs as a percentage to sales have increased by nearly 7% over the last 3 years.
• Power costs have increased on average from 1.6% of sales in 2010 to 2.2% in 2014 a 37% rise.
• Pay Television and Sky have increased on average from 1.0% of sales in 2010 to 1.4% in 2014 a 40% rise.
• Superannuation is rising from 9.25% to 9.5%.
• Modern Award Wage increase.
Bank Lending Trends Hotel Lending Environment
• Covenants – continuing concentration on hotels in meeting the banks financial covenants.
• Reporting requirements – more detailed information required to be provided to the bank.
• Loan to Value Ratios – come down in the last 5 – 7 years from 75% to between 50 – 60%.
• Debt Reduction – added pressure to reduce debt.
• Market – competition is strong and the banks are looking to increase business so opportunities available.
