ITS TIME TO ENJOY LOCAL FRESH STRAWBERRIESFrom Bruce Robertson, Community Educator with Cornell Cooperative Extension/ RensselaerCounty:Though strawberries are available in grocery stores year round ~ imported from thousands ofmiles away in the winter ~ there is nothing like fresh, local berries we wait for all year. Theyrein-season for a limited time now, so get em before theyre done. Their flavor and color arenearly beyond words to describe. So, too, are the nutrients fresher; berries begin losing theiroptimum vitamin levels the minute they are picked.Strawberries can be enjoyed just by themselves, or as a topping to cereals or yogurt. Then, too, there are strawberry jams and pies and smoothies. Here is a recipe featuring not only thein-season strawberries, but also spinach, which is available now. If you dont like almonds, orcant find them in stores, be creative and use cashews or walnuts.

    STRAWBERRY SPINACH SALAD

    Yields about 8 servingsINGREDIENTS:

x1 TBS poppy seedsx 2 TBS sesame seedsx 3/4 C slivered almondsx1 lbs. spinach, washed, dried and torn into bite-size piecesx1 pint strawberries, slicedxNon-stick cooking sprayStrawberry Dressing:x1 1/4 C strawberriesx1/3 C sugarx3 TBS orange juicex1 TBS white wine vinegarx1 TBS canola oilDIRECTIONS:

xCombine all Dressing ingredients in a blender and mix until smooth. Refrigerate until serving.xSpray cooking spray on nonstick skillet over medium heat. Add almonds; cook and stir until

lightly toasted, 2-3 minutes. Remove from heat and set aside to cool.xCombine spinach, strawberries, poppy seeds, sesame seeds and almonds.xPour half of dressing over and toss. Add more dressing as desired. Serve at once.Nutrition Analysis: 110 Calories; 2 grams fat; 5o mg sodium; 4 grams fiberSource: Adapted from Farm Fresh RecipesFor more information: Cornell Cooperative Extension of Rensselaer County, 61 State Street,Troy, NY12180 (518) 272-4210 or http://rensselaer.cce.cornell.edu/.
