    It is obvious, even to the most Prozaced-out individual, that todays global crises impacting the environment, health, economics, and social stability are threatening the survival of human civilization. Suddenly, the old cartoon of some bearded weirdo carrying a placard reading, The World is Ending! doesnt seem that funny. Media and government continuously focus our attention on the darkness of impending crises, however, recent advances in physics and biology offer a significantly different and amazingly hopeful alterna-tive for these very same symptoms.

    New scientific insights suggest the evolution of human civilization resembles the recurring fate of the Phoenix, a sacred firebird revered in ancient Egyptian mythology. At the end of its lifecycle the Phoenix builds a nest of cinnamon twigs that it then ignites; both nest and bird burn fiercely and are reduced to ashes. From the ashes arises a new and greater Phoenix.

    A renaissance in scientific awareness is rewriting our fundamental percep-tions about life and evolution.     My Dearest Readers,

    I want you to think of someone who represents success to you, in whatever way you choose to dene it. It can be an incredible humanitarian, a successful artist, a loving and patient mother, a wealthy business owner, or whoever personies achievement to you. Now ask yourself: what is it that makes that person different than you? What separates us from the people we admire? To put it a different way, what is it that creates our personal reality?

    All of our lives, we have been trained to think that our circumstances dene us. We see that the people we idolize have different circumstances; maybe theyre wealthier, more intelligent, know more inuential people, or are just in the right place at the right time. We could never be like them, we tell ourselves, because were too poor, ugly, stupid, awkward, sad, or lonely. These are the illusions we live with, and they keep us from fullling our true God-given potential.

    In reality, the difference between you and the person you want to be has nothing to do with your cir-cumstances. The only difference is your thoughts. Our thoughts are things, and they hold the magnetic magic and unlimited power of co-creation with God. Simply through the power of our thoughts, we can call our wildest dreams into reality.

    I used to sabotage myself and my happiness through worst-case scenario thinking. Anxiety was like a defense mechanism for me. If I anticipated the worst, I imagined I wouldnt be so disappointed if it happened. In reality, by envisioning the absolute worst, I was focusing my thoughts on what I didnt want instead of what I did. I was manifesting the worst-case scenario instead of what I really wanted in life. Doing this over the long-term becomes a habitual pity party. We all know people who live this way, who constantly say things like:

    This is just my luck. Im too fat. Im not smart enough. I could never do that.

    And sure enough, these statements become true. I cant say this enough: you are your thoughts. This is so empowering! It means you can recreate your life simply through the power of your mind. This doesnt mean youll never feel negative emotions or anxiety- it just means they are temporary indica-tors of the state of your life at that moment and will soon be overcome by the awesome power of your internal light.

    I talk to people every day who have been diagnosed with all varieties of scary diseases. I encourage them to think of the diagnosis as merely an indicator of where they are today, not where they will be in the future. When your gas gauge is on empty, you dont plan a funeral for your car. You use this as an indicator that your car needs gas. Its the same thing with your health. The diagnosis is an indicator to make a change. Thats all! You get to have a new lease on life everyday.

    You have power over your thoughts, and therefore you are the sole decider of your emotional state,

  • your life circumstances, your relationships, your money, and absolutely everything else. You are who you think you are. Do you think you are broken? Or do you think you are in a delightful process of learning what you dont want so you can create with God what you do want?

    Change your thoughts, and you will change your life. Keep growing, keep oating downstream, instead of constantly ghting the current of your own anxieties and fears. Enjoy this beautiful life, and live it boldly, with a pure heart and a peaceful mind.

    upon new scientific insights that dispel the myth of genes, the limiting belief that genes control biology.

    Genetic Determination QuestionedRecently, results of the Human Genome Project have shattered one of Sciences fundamental core beliefs, the concept of genetic determinism. We have been led to believe that our genes determine the character of our lives, yet new research surprisingly reveals that it is the character of our lives that controls our genes. Rather than being victims of our heredity, we are actually masters of our genome.

    The new science of epigenetics il-luminates how our mind (perceptions, attitudes, and emotions) shapes biology and behavior. Throughout infancy, our primary perceptions of life were pro-grammed with cultural beliefs. Since

    culture and the emergence of a new one. Western Civilization evolved through a sequence of such cultural upheavals; transitioning from animism (aborigi-nal cultures such as Native Americans), to polytheism (e.g., Egyptians, Romans, and Greeks), to monotheism (Judeo-Christian and Islamic cultures) and to the current culture of scientific material-ism (based upon the truths of Modern Science). Each civilization is defined by its own unique basal paradigm.

    Four Flawed TruthsCurrently civilization is poised for another cultural upheaval. Recent revisions in science are profoundly revising four flawed truths upon which our culture is built. I refer to these old beliefs as the Four Myth-Perceptions of the Apocalypse, misperceptions that are contributing to the demise of our civilization.

    l Myth #1 Biology is controlled by matter-based Newtonian mechanics. Revised Perception Biology is con-trolled by invisible Quantum mechanical forces.

    l Myth #2 Genes control life

    Revised Perception The new science of epigenetics reveals that environment controls genes.

    Self Receptors: A membrane protein within the cell that is unique for each individual.

    perceptions shape behavior and gene activity, cultural beliefs become biology. For example, are we violent because we are genetically disposed to being violent? Or, are we violent because we believe we are genetically disposed to being violent? The new science reveals either cause could be right.

    The Central DogmaCell biology is important because the human body is actually a community of upwards to fifty trillion cells. The physical and behavioral traits of cells are derived from over 150,000 different protein building blocks whose structures are programmed in our genes. One of biologys most hallowed beliefs, codified as the Central Dogma, stipulates that in-

    formation in biology flows in only one direction: from DNA to RNA to protein. Consequently, the Central Dogma provides for the notion of genetic deter-minism, the belief that genes control the character of life. Textbooks and mass media are still informing the public that genes control their lives, regardless of the fact that most biologists are now aware that this simplified assumption is not valid.

    Between the 1970s and 80s, as a tenured faculty member of the University of Wisconsins School of Medicine, I was dutifully programming the Central Dogma into the malleable minds of my medical students. However, my university work was primarily concerned with research on muscular dystrophy employing cultures of cloned stem cells. Cloned cells are created by inoculating a single stem cell into a culture dish and allowing it to divide many times, producing thousands of genetically identical cells.

    To my surprise, I found that by

    changing some of the components in my tissue culture dishes or by changing the composition of the incubators atmo-spheric gases, I could profoundly alter the fate of my cultured cells. For example, I would split my stem cell culture into three tissue culture dishes, each exposed to different environmental condition. In one dish the cells formed muscle, in another they formed bone, and in the remaining dish the cells formed fat (adipose). Since my culture were seeded with genetically identical stem cells, it was clear that the differentiated fate of the cell was under the control of the culture environment and NOT the genes.

    Science or Religion?My peers considered my studies heretical since they challenged the Dogma of gene control. Heresies, dogmasmy first realization that modern science was somewhat of a religion! These studies, demonstrating that cells were not con-trolled by genes, emphasized the power of nurture over nature in influencing our lives.

    Though research has established that genes dont control life, textbooks and mass media still refer to the gene-contain-ing nucleus as the cells brain, fostering the outdated belief that genes control biology. Twenty years ago, I had recog-nized that the nucleus was not the brain, it was functionally equivalent to the cells gonads, strictly involved with cell re-production. Additionally, experiments in which the cells nucleus is removed showed that cells can live and express complex behaviors for two or more months without having any genes.

    Spurred on by challenges from dis-believing peers, I refocused my research to identify the mechanisms by which environmental information controlled behavior and genetics. Eventually my quest revealed the cells skin (the cell membrane) was responsible for reading

    and responding to environmental condi-tions. Switches in the membrane were comprised of protein receptors, the cells equivalents of eyes, ears, and nose, that read environmental signals and protein effectors that activated cell functions or the reading of genes. Membrane switches enable cells to dynamically adapt their genes and behavior to conform to envi-ronmental demands.

    Molecules & PerceptionMembrane switches are molecular units of perception used in regulating the cells biology. The membrane, more accurate-ly the mem-Brain, represents the cells equivalent of a brain. Understanding membrane structure and function would be key to understanding the nature of life. In 1985, I was reviewing the molecular architecture and behavior of the cell membrane as an environmental informa-

    tion processor. In outline form, I jotted down a series of descriptive phrases using terms I hadnt used before. I sat back and reviewed what I had just written: The cell membrane is a liquid crystal semi-conductor with gates and channels.

    As a cellular biologist, Id never used these particular phrases, yet they sounded very familiar. Where had I heard them? On the corner of my desk, I noticed my first computer, a smiley-faced Macintosh, and next to it a book I had been reading entitled Understanding Your Microprocessor. On page three in the books introduction was the definition of a computer chip, a crystal semiconductor with gates and channels.

    I froze. The next sequence of thoughts happened probably in millisecondsbut to me, it seemed like hours. First I

    thought, What a coincidencethe cell membrane and a computer chip share the same definition! Then a few more hour-long milliseconds lapsed and it hit me, This was not a simple coincidence! The molecular architecture and behavior of a computer chip is essentially identical to a cell membrane! The membrane is not analogous to a chip; the membrane is homologous to a chip. Meaning, the membrane is not like a chip, the membrane IS a chip.

    The cell membrane is a carbon-based, molecular equivalent of a silicon-based computer chip. Every cell is a program-mable chip, with a hard drive (the nucleus) containing software (genes). As with conventional silicon based computers, cellular data is entered via a keyboardcomprised of thousands of different membrane protein receptors keyed to different environmental signals. Ambient environmental signals are converted into cell behavior by the membranes effector proteins.

    Rewriting Gene ProgramsAround ten years ago, the new science of epigenetics evolved to describe the molecular mechanisms by which envi-ronmental signals dynamically control the activity of genes. Most important-ly, epigenetic mechanisms can generate over 30,000 different protein variations from each gene blueprint. In contrast to the belief that genes are hardwired programs, epigenetics reveal that gene programs are rewriteable, enabling cells to adapt to dynamic environments. Epigenetic science demonstrates that the cells nucleus is a read-write hard disk, wherein gene software is programmed by the membranes response to environmen-tal perceptions.

    Since cells respond to environmen-tal cues, why are we not human clones since we are exposed to the same envi-ronment? The answer: no two people are

    biologically the same; your body would reject a tissue or organ graft from anyone else by recognizing the foreign cells as not being self. Likewise, your cells would be rejected by any other recipient for the same reason.

    Where is an individuals identity to be found? The cells in each body have a unique set of membrane proteins on their outer surface. Medicine identifies a subset of the these receptors as self-receptors, literally, receivers of self. When self-receptors are removed from a cell it becomes a generic cell, transplant-able into anyone without being rejected. Transferring one persons set of self-receptors on to anothers cell would also transfer ownership of that cell.

    Where does our identity come from? Apparently, it is a unique signal from the field read by our self-receptors. Importantly, this communication is a two-way street; signals are not just coming into the cells, since our experiential awareness is sent back out to the field and changes the source! The invisible moving forces described by quantum biophys-ics that activate the self-receptors are the same invisible moving forces acknowl-edged as spirit.

    Interestingly, the signals defining self are still in the environment even if the cells die and are not here to read them. Even more interesting, a new child could come into being displaying an old set of self-receptorsthe old soul would be back on airreincarnation!

    For a guy who didnt believe in spir-ituality, understanding the nature of the membrane rocked my world. It was a transformational moment for me to discover that I am NOT a biochemi-cal robot but a spiritually controlled community of programmable cells who is now collaborating with other cell communities to create the new human Phoenix. b

    Red Wine and Tea Shown to Help Regulate Blood Sugar A study by researchers at the University of Massachusetts (Amherst) has shown that red wine and tea may both hold promise for regulating the blood sugar of people with type 2 diabetes.

    Patients with type 2 diabetes often experience a sharp rise in blood glucose levels im-mediately following a meal. The study, published in the Journal of Food Biochemistry, showed that the natural antioxidants in red wine and tea may help to slow the passage of glucose through the small intestine and into the bloodstream, which can prevent a blood sugar spike.

    Maintaining normal blood sugar levels is vitally important in the management of diabetes; doing so can help prevent the disease from contributing to heart disease and high blood pressure as well as damaging the eyes, kidneys, nerves, and blood vessels.

    In the study, researchers tested how well wine and tea could inhibit the activity of a target enzyme called alpha-glucosidase, which is responsible for triggering the ab-sorption of glucose by the small intestine. Red wine came out on top, as it was able to inhibit the enzyme by nearly 100 percent, compared to white wine at 20 percent. Out of the four types of tea testedblack, oolong, white, and greenblack tea was most effective, followed by white tea and oolong tea. b

    Dr. Brownstein on MercuryThe following is a blog post taken from the website of Dr. David Brownstein (www.drbrownstein.com)

    A recent article on MSNBC (3.20.08) promoted the use of uorescent bulbs. These bulbs are touted as energy efcient. With the cost of oil so high, we are all interested in saving energy. In fact, I have put some of these bulbs (full-spectrum) in my house.

    The article goes on to point out that there is a problem with these bulbs. They contain mercury. The author points out the amount of mercury in these bulbs is tiny-about ve milligrams, or barely enough to cover the tip of a pen. But that is enough to contaminate up to 6,000 gallons of water beyond safe drinking levels

    Further in the article, the EPA offers advice about how to clean up a dropped bulb. There is an 11 step procedure to clean up the tiny amount of mercury. Now, the bulbs dont sound so good.

    I have witnessed the problems with mercury toxicity in my patients. From autoimmune illness to cancer, mercury can wreak havoc on a patients immune system. It still amazes me that dentists continue to put mercury llings in their patients mouths. The ADA tells us that it is safe to put the most toxic substance known to mankind in a human mouth. The ADA expects us to believe that 20 years of chewing on mercury tainted surfaces will not absorb mercury into our bodies. However, the ADA is a foolish organization that will have to own up to their poor advice.

    The time is coming when the ADA will face an avalanche of lawsuits for allowing (and even promoting) the use of mercury llings as a safe dental material.

    Health Benets from Natural Trans FatsDespite what you may have heard, not all trans fats are bad for you. Thats the take-home message from a recent study by a researcher at the University of Alberta in Canada.

    According to researcher Flora Wang, the natural trans fats found in yogurt, cheese, milk, and your favorite cut of beef or lamb may actually lower your cholesterol and help reduce your risk of cardiovascular disease, obesity, and diabetes.

    Wang, a PhD student in the schools agricultural, food, and nutrition science de-partment, stated we want people to realize that natural trans fats are not necessarily detrimental. She also noted that natural trans fats are far different than the industrial trans fats commonly found in margarines, doughnuts, and most snack foods.

    Wangs research focused on foods with trans vaccenic acid (VA), the most prominent trans fat found in dairy and beef products. For sixteen weeks she fed obese and diabetic rats a diet enriched with trans vaccenic acid and discovered that their total cholesterol was lowered by approximately 30 percent, LDL cholesterol by 25 percent, and tri-glyceride levels by more than 50 percent.

    Wang and University of Alberta professor Spencer Proctor believe that this benefit is due to the ability of VA to reduce the production of chylomicronsparticles of fat and cholesterol that form in your small intestine following a meal.

    Our trials are among the first to show that over-production of chylomicrons during obesity and the metabolic syndrome can be partially reversed by VA, Yang stated. As the VA results illustrate, some natural trans fats are not harmful and may, in fact, be very good for you. b

    Cod Liver Oil Reduces Need For Arthritis DrugsA study by researchers at the University of Dundee in Scotland shows further evidence that cod liver oil can benefit people suffering from rheumatoid arthritis. The study, published in the journal Rheumatology found that people taking a cod liver oil supplement could reduce their use of anti-inflammatory drugs by more than 30%.

    Patients in the study were given either cod liver oil or a placebo. After 12 weeks, they were asked to gradually reduce and, if possible, stop their use of non-steroidal anti-inflammatory drugs (NSAIDs). Among those taking cod liver oil, 39 percent were able to cut their daily use of NSAIDs, compared with 10 percent taking a placebo. The reduction in drug use was not associated with any worsening of pain or of the disease. It is thought that the fatty acids in the fish oil have anti-inflammatory proper-ties that are responsible for the beneficial effect.

    Lead researcher Dr. Jill Belch stated, This study offers hope to many rheuma-toid arthritis patients for whom cod liver oil supplements can offer a natural pain management treatment without the harmful side effects associated with the use of anti-inflammatory drugs. Ibuprofen and other NSAIDs are associated with many side effects, including stomach bleeding, heart attacks, and strokes. b

    In 1945, Weston Price published a second edition of his pioneering work Nutrition and Physical Degeneration, to which he added a new chapter entitled, A New Vitamin-Like Activator. In it, he presented evidence of a thereto-fore unrecognized fat-soluble substance that played a fundamental role in the uti-lization of minerals and whose absence from modern nutrition was responsible for the proliferation of dental caries and other degenerative diseases. Although Price quantified the relative amount of this substance in thousands of samples of dairy products sent to him from around the world, he never determined its precise chemical identity. For want of a better means of identification, he referred to it as Activator X, also sometimes referred to as the Price Factor.

    Price found the highest concentrations of this nutrient in the milk of several species, varying with the nutrition of the animal and found the combination of cod liver oil and high-Activator X butter to be superior to that of cod liver oil alone. In the many butter samples he tested, Activator X was only present when the animals were eating rapidly growing green grass. In most regions, this occurred in the spring and early fall.

    A Sixty-Year MysteryFor over sixty years, all attempts to identify this elusive X factor have failed. In the 1940s, Dr. Royal Lee, founder of the whole food supplement company Standard Process, suggested that Activator X was an essential fatty acid. In 1980, Dr.

    Jeffrey Bland suggested more specifi-cally that it was the elongated omega-3 essential fatty acid called EPA. Although these fatty acids exert some effects on calcium metabolism, neither the distri-bution of these unsaturated fatty acids in foods nor their chemical behavior corre-sponds to that of Activator X. Cod liver oil is much richer than butter in essential fatty acids including EPA, and the oils of plant seeds are even richer in these fats, but Price found little, if any, Activator X in these foods. Moreover, Price tested for Activator X by quantifying the ability of a food to oxidize iodide to iodine; essential fatty acids, however, do not possess this chemical ability.

    K vitamins possess oxygen-contain-ing ring structures that are capable of oxidizing iodide to iodine and would therefore be detected by Prices Activator

    X test. The K vitamins are likely to go down in history as the most misunder-stood group of vitamins of the twentieth century. In many ways, however, modern researchers are now rediscovering prop-erties of these vitamins that Price had discovered over sixty years ago. It has now become clear that both Activator X and its precursor in rapidly growing grass are both members of this group.

    There are two natural forms of vitamin K: vitamin K1 and vitamin K2. Vitamin K1, also called phylloquinone, is found in the green tissues of plants. When animals consume vitamin K1, their tissues convert part of it into vitamin K2, which fulfills a host of physiological functions in the animal that we are only now beginning to understand. The ability to make this con-version varies widely, not only between

    Although both K vitamins were dis-covered and characterized over the course of the 1930s, two fundamental misunderstandings about these vitamins persisted for over sixty years: the medical and nutritional communities considered blood clotting to be their only role in the body,and considered vitamins K1 and K2 to simply be different forms of the same vitamin. The first vitamin K-dependent protein relating to skeletal metabolism was not discovered until 1978. It was not until 1997, nearly twenty years later, that the recognition that vitamin K was not just for clotting anymore broke out of the confines of the fundamental vitamin K research community.

    Since the amount of vitamin K1 in typical diets is ten times greater than that of vitamin K2, researchers have tended to dismiss the contribution of K2 to nutri-tional status as insignificant. Yet over the last few years, a growing body of research is demonstrating that these two substanc-es are not simply different forms of the same vitamin, but are better seen as two different vitamins: whereas K1 is prefer-entially used by the liver to activate blood clotting proteins, K2 is preferentially used by the other tissues to place calcium where it belongs, in the bones and teeth, and keep it out of where it does not belong, in the soft tissues.

    Perfect CorrespondenceBecause vitamin K1 is directly associated with both chlorophyll and beta-carotene within a single protein complex and plays a direct role in photosynthesis, the richness of the green color of grass, its rate of growth, and its brix rating (which measures the density of organic material produced by the plant) all directly indicate its concentration of vitamin K1.     The table below shows the distribution of vitamin K2 in selected foods. Precise values for the organ meats that would be richest in K2 are not available. The pancreas and salivary glands would be richest; reproductive organs, brains, cartilage, and possibly kidneys would also be very rich; nally, bone would be richer than muscle meat. Analyses of sh eggs, which Price found to be rich in Activator X, are not available.The percentage of vitamin K2 present as MK-4 represents that synthesized by animal tissues, while the remainder rep-resents that synthesized by bacteria during fermentation.

The beta-carotene associ-ated with vitamin K1 will also impart a yellow or orange color to butterfat; the richness of this color therefore indirect-ly indicates the amount of both vitamins K1 and K2 in the butter. Not only are the K vitamins detected by the Activator X test and distributed in the food supply precisely as Price suggested, but the physiological actions that Price attribut-ed to Activator X correspond perfectly to those of vitamin K2. It is therefore clear that the precursor to Activator X found in rapidly growing, green grass is none other than vitamin K1, while Activator X itself is none other than vitamin K2.

    Ironically, Price discovered the roles of vitamin K2 in calcium metabolism, the nervous system, and the cardiovascular system more than sixty years before the vitamin K research community began elu-cidating these roles itself, while vitamin K researchers discovered the chemical structure of Activator X several years before Price even proposed its existence. Had Price been aware that his chemical test had been used for decades outside of the English language scientific community to detect quinones, a class to which the K vitamins belong, the two independent discoveries of this one vitamin may have converged sooner.

    Price showed Activator X to exhibit dramatic synergy with vitamins A and D. He found that the combination of cod liver oil and a high-Activator X butter oil concentrate was more effective than cod liver oil alone in treating his patients for dental caries and other signs of physical degeneration.

    Modern research has shown that Vitamin K2 is the substance that makes the vitamin A- and vitamin D-dependent proteins come to life. While vitamins A and D act as signaling molecules, telling

In some cases these proteins directly coordinate the movement or organization of calcium themselves; in other cases the calcium acts as a glue to hold the protein in a certain shape. In all such cases, the proteins are only func-tional once they have been activated by vitamin K.

    Mystery SolvedFor over 50 years after Price described his discovery of Activator X, the medical and nutritional communities saw vitamin K merely as a requirement for blood clotting. The poor understanding of the functions of the K vitamins within the body and the apparent lack of any rela-tionship between Prices chemical test and the structure of any known vitamin made it impossible to determine the identity of this mysterious substance. We now know, however, that vitamin K2 and Activator X are one and the same. Like Prices X factor, vitamin K2 is synthe-sized by animal bodies from its precursor in rapidly growing grass. Cereal grasses and alfalfa are rich in this precursor, and these plants accumulate it in direct pro-portion to their photosynthetic activity. It is critical to the ability of teeth and bones to lay down mineralized tissue and to the prevention of degenerative diseases of the cardiovascular and nervous systems. It is the key factor that acts in synergy with vitamins A and D: these vitamins command cells to make proteins, but vitamin K brings these proteins to life.     Once upon a time Americans had a culture of food to guide us through the increasing-ly treacherous landscape of food choices: fat vs. carbs, organic vs. con-ventional, vegetarian vs. carnivorous. Culture in this case is just a fancy way of saying your mom. She taught us what to eat, when to eat it, how much of it to eat, even the order in which to eat it. But Moms influence over the dinner menu has proved no match for the $36 billion in food-marketing dollars ($10 billion directed to kids alone) designed to get us to eat more, eat all manner of dubious neofoods, and create entire new eating occasions, such as in the car. Some food culture.

    Ive spent the past five years exploring this daunting food landscape, following the industrial food chain from the Happy Meal back to the not-so-happy feedlots in Kansas and cornfields in Iowa where it begins and tracing the organic food chain back to the farms. My aim was simply to figure out whatas a nutritional, ethical, political, and environmental matterI should eat. Along the way, Ive collected a few rules of thumb that may be useful in navigating what I call the Omnivores Dilemma.

    Dont eat anything your great-great-great grandmother wouldnt recognize as food. Imagine how baffled your ancestors would be in a modern supermarket: the

    epoxy-like tubes of Go-Gurt, the pre-ternaturally fresh Twinkies, the vaguely pharmaceutical Vitamin Water. Those arent foods, quite; theyre food products. History suggests you might want to wait a few decades or so before adding such novelties to your diet, the substitution of margarine for butter being the classic case in point. My mother used to predict they would eventually discover that butter was better for you. She was right: the trans-fatty margarine is killing us. Eat food, not food products.

    Avoid foods containing high-fructose corn syrup (HFCS). Its not just in cereals and soft drinks but also in ketchup and bologna, baked goods, soups, and salad dressings. Though HFCS was not part of the human diet until 1975, each of us now consumes more than 40 lbs. a year, some 200 calories a day. Is HFCS any worse for you than sugar? Probably not, but by avoiding it youll avoid thousands of empty calories and perhaps even more important, cut out highly processed foods--the ones that contain the most

    Spend more, eat less. Americans are as addicted to cheap food as we are to cheap oil. We spend only 9.7% of our income on food, a smaller share than any other nation. Is it a coincidence we spend a larger percentage than any other on health care (16%)? All this cheap food is making us fat and sick. Its also bad for the health of the environment. The higher the quality of the food you eat, the more nu-tritious it is and the less of it youll need to feel satisfied.

    Pay no heed to nutritional science or the health claims on packages. It was science that told us margarine made from trans fats is better for us than butter made from cows milk. The more I learn about the science of nutrition, the less certain I am that weve learned anything important about food that our ancestors didnt know. Consider that the healthiest foods in the supermarketthe fresh produceare the ones that dont make FDA-approved health claims, which typically festoon the packages of the most highly processed foods. When Whole Grain Lucky Charms show up in the cereal aisle, its time to stop paying attention to health claims.

    Shop at the farmers market. Youll begin to eat foods in season, when they are at the peak of their nutritional value and flavor, and youll cook, because you wont find anything processed or microwavable. Youll also be supporting farmers in your community, helping defend the coun-tryside from sprawl, saving oil by eating food produced nearby, and teaching your children that a carrot is a root, not a machine-lathed orange bullet that comes in a plastic bag. A lot more is going on at the farmers market than the exchange of money for food.

    1 can coconut milk*1 red bell pepper - chopped into 1-2 inch peices1 green chili pepper - minced3 taro root - peeled and chopped into 1-2 inch pieces1 lemon grass - sliced thinly3 T green curry paste 2 baby bok choy - chopped into 1-2 inch piecesCeltic Sea Salt Brand Sea Salt* to tasteFresh ground black pepper* to taste1 llet Mahi Mahi - cut into 2-3 inch pieces or cut in half1 c. water1 T. coconut oil*2 bunches fresh basil - left whole

    Prep all vegetables. Heat a medium sized saute pan on medium to high heat and add coconut oil. Saute lemon grass for a few minutes until golden brown. Add coconut milk, red pepper, chili, taro root, bok choy, basil, curry paste, and water and bring to a simmer. Season with salt and pepper to taste. Add more curry paste to taste. Add Mahi Mahi to pan and allow to simmer for 5-7 minutes, and check if done. Be sure to not over cook and dont allow the liquid to cover the sh, it is similar to poaching. Serve with jasmine rice and enjoy!

    Major Retailers Phasing Out Baby Bottles With Bisphenol AWal-Mart and Toys R Us (which also includes Babies R Us) recently announced that they will phase out baby bottles that contain the chemical bisphenol A

    Also called BPA, Bisphenol A is found in polycarbon-ate plastic, which is used to make products including some water and baby bottles and the plastic lining of canned foods containers. The synthetic compound has come under fire in recent years from health and environ-mental researchers because of studies showing that it is a hormone disrupter. Even at low levels, BPA has been linked to abnormalities in the mammary and prostate glands and the eggs of laboratory animals.

    A draft report released April 15th says that U.S. government scientists have some concerns about bisphenol As effects, based on lab tests in rodents. But that report isnt final and doesnt make any specific recommendations regarding the safety of bisphenol A.

    Concerns over BPA arent just limited to baby bottles. Nalgene, a manufacturer of reusable bottles, has said it will stop using the chemical in its products as well. b
