Class 1 The Nation’s Favourite A jar of strawberry jam.

Class 2 Soft Fruit Jam A jar of jam made only with one or more soft fruits, i.e. fruit without a stone.

Class 3 Stone Fruit Jam A jar of jam made from fruit with a single central woody stone.

Class 4 Man Made Jam A jar of jam made by a man using any variety of fruit.

Class 5 Jelly A jar of any fruit jelly preserve e.g. made from fruit cooked and strained to provide juice which is boiled with sugar to setting point.

Class 6 A Jam with a Difference A jar of jam using a combination of more unusual fruit.

Class 7 Children’s Jam or Jelly A jar of jam or jelly made by a child using any fruit.

Class 8 Christmas Themed WI Co-operative A co-operative class for WI members only. Three jars of preserves suitable for a Christmas gift to be presented in an open-topped box or basket. Extra marks will be awarded for presentation. N.B. Only one entry fee is payable to enter this class.

Class 9 Hot and Spicy Jam or Jelly Some like it hot, hot, hot – bring it on.

Class 10 The WI Set Recipe: Plum and Mulled Wine Jam Can you make the perfect jar according to our set recipe? Please see over for details.

Class 11 Boozy Jam or Jelly Try your hand at crafting a boozy jar of jam or jelly.

Class 12 Christmas Chutney Sweet or hot? Fruity or vegetable-based? Enter a jar of your favourite chutney, but make sure it’s Christmas themed.

cOmPeTITION ScHeDULe

There are classes for everyone including children, WI members, non-members and a class just for men. So the whole family can take part and enjoy turning delicious produce into prize-winning entries. Festive themed classes on the competition schedule include a chutney class, the WI co-operative and a Christmas set recipe to challenge the best of the best cooks!

Our sponsors, Stoves, are giving their support to the festival by offering some amazing prizes including £1,000 of Stoves appliances to the best in show winner. A class at the WI Cookery School and a host of other prizes are also up for grabs. So enter a jar today!

Tickets for entry to the Christmas Fair and Real Jam Festival will be on sale from 1 October 2013 from Denman. Tickets cost £3 per person in advance or £4 on the day with free admission for children aged 16 and under. Welcome to the Christmas Fair and Real Jam Festival 2013. Building on the success of last year’s event held at Denman, the team are working hard to make this year’s event even more special. The two-day festival will be held on the 7 & 8 December 2013, with new classes added to the jam competition.

The Set Recipe Class in last year’s competition was such a success that we decided to include one on a Christmas theme this year. The judges will be able to compare how each entrant has developed their skillsastheycooktheirbestjarofPlumandMulledWine Jam – a lovely recipe packed with Christmas flavours. The skill is to follow this recipe exactly – entrants must not add any other ingredients than those listed. Let the competition begin!

HeLPFUL INFOrmATION 1. The entrance fee for all classes is £3 (except the

Children’sClasswhichisfreetoenter).Chequesto be made payable to Denman College, please ensure you put your name and address on the reverse and the words Jam Festival.

2. All jars not less than 250g (½lb) minimum size.

3. Use clean jars with no images/logos/words and fill to the brim.

4. Use new lids, if possible. Recycled lids, if used, must be free of images/logos/words and with no aroma of previous jar contents.

5. Label the front of the jar with class, name of jam and full date when made.

6. Attach a label with your name and telephone number/email address to the bottom of the jar.

7. All entries must be the bonafide work of the competitor.

8. Class 7 to be made by children up to 16 years of age.

9. Class 8 is to be made by current WI members only. Entries to this class must also be the work of more than one person.

10. If you would like to know how you fared in your class, please send a stamped, self-addressed envelope (SAE) so we can return your score card/s. Please mark on the top left-hand corner the number of the class/es you are entering.

11. Lastyearwehadlotsofrequestsforjamtasting.If you would like to provide a second jar of jam so that the public can taste your entry on the day of the festival, please send it with your competition entry, clearly marked Tasting Jar.

12. People who make jam professionally can enter the competition, but they must do so under their own name. Their jar must not contain references to their company or brand.

JUDGING, cONDITIONS OF eNTrY, bITS AND bObS 1. Judging will take place on 5 & 6 December 2013

by WI preservation and other invited judges.

2. Judging will be based on appearance, colour, consistency, aroma, flavour, cover and container. Tips on jam making are available on the WI website www.theWI.org.uk.

3. The judges’ decision shall be final.

4. No responsibility will be undertaken for damage or loss of entries before, during or after the festival, but reasonable care will be taken.

5. Entries will not be returned.

6. The festival will be open to the public 7 December 2013 10.30am-4.30pm and 8 December 2013 10.30am-3.30pm.

7. Prizes and certificates will be awarded on 8 December 2013. No entries to be removed before 3.00pm on this day.

8. All classes are judged without knowledge of the entrant, therefore both WI members and non-members are judged on the same lines.

THe reAL JAm FeSTIVAL SeT recIPe cLASS PLUm AND mULLeD WINe JAm

Makes: 6 x 450g JarsPreparation and Cooking Time: 50 minutes

1.8kg (4lb) red plums, halved and stoned

375ml (13fl oz) red wine

Mulledwinespices (e.g. cinnamon, nutmeg or cloves)

1 piece of orange zest without pith

1.8kg (4lb) granulated sugar

1. Put the plums and wine in a large preserving pan.

2. Place the spices and zest in a spice ball or muslin bag and add to the pan.

3. Bring to the boil and simmer gently for 15-20 minutes or until the plum skins are soft.

4. Remove the spice ball or bag and add the sugar, stirring until dissolved.

5. Bring to the boil and boil rapidly for about 10 minutes or until setting point is reached. Remove any scum.

6. Pour into cooled, sterilised jars. Seal and label.
