■ CHEF: Preparing food to restaurant standards to meet today’s hygiene requirements

New display for hygiene standards when eating out.Kirklees council has switched to a

new way of displaying thehygiene standards of food

businesses to consumers.The Food Hygiene Rating Scheme (FHRS) wentlive on April 2.This national scheme developed by the FoodStandards Agency (FSA) in partnership withlocal authorities in England, Wales andNorthern Ireland, provides information on foodhygiene standards to help people to choosewhere to eat out or shop for food.

New scheme

The new scheme will build on the success of theScores on the Doors scheme that the council hasbeen running.Food businesses such as restaurants, takeawaysand pubs are inspected by food safety officers tocheck their hygiene standards meet legalrequirements.The hygiene standards found at these premisesare rated on a scale from zero at the bottom(which means “urgent improvement necessary”)to a top rating of five (“very good”).These ratings will be available for anyone toview on the FSA website at food.gov.uk/ratings.The food business will be given a sticker andcertificate and encouraged to display these at theentrance of their premises.This means customers can easily see the ratingand decide if they want to go in.However there is no legal requirement to displaythe rating.Scores on the Doors was a successful schemebut we opted to change to the FHRS as we cansee the benefits for local businesses and theircustomers.A single scheme gives consistency nationwide sothat the rating will have the same significancewherever people are buying food.

Use the information

The public will be able to use the informationwhen deciding which food outlets to visit and wehope that food businesses will recognise thatdisplaying a good hygiene rating is good forbusiness.The council will continue to offer support tobusinesses scoring a low rating.To check the food hygiene rating of any businessgo to www.food.gov.uk/ratings.

RESTAURANTS and other foodoutlets are now required to meetexacting standards in food
