RestaurantsLook for five star standard when eating outA NEW Food Hygiene Rating

Scheme (FHRS), whichlaunched in 2012, has changed

the way food business hygienestandards are displayed toconsumers. The new scheme provides information on foodhygiene standards to help people to choosewhere to eat out or shop for food. The newscheme builds on the success of Scores on theDoors. This is a national scheme developed by theFood Standards Agency (FSA) and run locallyin partnership with Kirklees Council.Food businesses such as restaurants, takeawaysand pubs are inspected by food safety officersto check their hygiene standards meet legalrequirements. The hygiene standards are rated on a scalefrom zero at the bottom (meaning ‘urgentimprovement necessary’) to a top rating of five(‘very good’).These ratings will be available for anyone toview on the FSA website atfood.gov.uk/ratings.The food business will be given a sticker andcertificate and encouraged to display these atthe entrance of their premises.Customers will be able to easily see the ratingand decide if they want to go in.Cllr Peter McBride, Cabinet member forInvestment and Regeneration, said: “Scores onthe Doors was a successful scheme but weopted to change to the FHRS as we can seethe benefits for local businesses and theircustomers.“Having a single scheme which is consistentnationwide means that the rating will have thesame significance wherever people are buyingfood.“The public can use the information whendeciding which food outlets to visit and wehope that food businesses will recognise thatdisplaying a good hygiene rating is good forbusiness.“We will continue to offer support tobusinesses scoring a low rating.”To check the Food Hygiene Rating of anybusiness go to www.food.gov.uk/ratings.

■ ENJOY: Whatever the occasion, a meal out is always a time to relax with friends or family

■ LOOKING GOOD: Hygiene standards in the kitchen andamong the staff are so important in the preparation of food

A clean kitchen begins with the chefHygience in the kitchen of any

restaurant begins and ends withthe chef in charge.

He or she is in overall control of the kitchenand needs to ensure a spotless environment. What does a career as a chef involve?Chefs prepare, cook and present food using avariety of cooking methods. To become a chef you need to have a keeninterest in food and cooking, the ability to worklate and long hours under pressure, highstandards of cleanliness and hygiene, andcreativity and imagination for foodpresentation. What training do you need? You would usually start as a kitchen assistant

or trainee chef, also known as a commis chef, spending time in each area of the kitchen andlearning a range of skills. With experience, you can move onto being asection chef, also known as station chef or chefde partie, where you would be in charge of anentire area of the kitchen. The next step up is sous chef, where you run theentire kitchen on behalf of the head chef, who isresponsible for creating and updating dishesand menus. You may not need any academic qualificationsto start work as a trainee chef, but mostemployers will prefer a good general standardof education, possibly including a hospitality orcatering qualification. There are around 250,000 chefs and cooks in

the UK, but there is apparently a shortage ofskilled chefs, which means there should beplenty of opportunity for career progression.Work can be found throughout the UK in everyarea of the industry including hotels, restaurants, wine bars and cafes, as well aswithin education, the NHS and the ArmedForces. With qualifications and on-the-job experience, you could progress to the position of head chefor kitchen manager/ supervisor. There are usually more opportunities forpromotion in larger kitchens.Experienced chefs sometimes set up on theirown or teach catering or professional cookeryin colleges. In any kitchen the cleanliness of theestablishment begins with the chef in charge.

■ CHEF: A great restaurant has a greatchef with a scrupulously clean kitchen

■ TASTY: Foods from across theworld now available locally

RestaurantsGreat restaurants havemodern pristine kitchensEXCUSE me waiter,

there’s a fly in mysoup!

That’s the last thing you wantto be saying when you go outexpecting a delicious meal in apristine restaurant.Just imagine going to eat outand finding yourself with a flyin your soup or with a dirtyknife at your place setting - oreven a dirty stained tablecloth. All enough to put you off evergoing back to the samerestaurant again. That’s why today’s restaurantsneed to ensure they maintainstrict hygiene standards tomake certain nothing like thatevery happens. The problem, of course, if itdoes is that people soon findout. Word spreads and thenyou have a problem. With the introduction of the

food hygiene awards, manyrestaurants have taken greatsteps forward in order toimprove their rating.Gone are the dodgy kitchensof the past, replaced insteadby pristine and modernkitchens which are a credit tothe owners.Staff from the local councilregularly check to see what isgoing on in local kitchens. This ensures that standardsare upheld and the health ofthe general public ismaintained.Next time you go out to eat, check the restaurant’s rating.Five star is obviously great butfour stars show thatestablishments are makinggreat improvements. It’s up to you then to decideon the lower scores!!

Restaurants should aim tobe top of the league tableITALIAN restaurants top the

UK’s dining-out league.A survey of 4,000 people has found thatpeople spend more money on Italian foodthan any other type of meals. The average person spends £571 annuallyon eating out at Italian trattoria, compared to £421 on French bistros and£370 in tandooris.Pasta and pizza accounts for almost halfof the average person’s yearly expenditureon restaurants. The survey found that Britons spend anaverage of £1,513 a year on eating out, although one in 10 admit to eating theirway through between £5,000 and £10,000worth of restaurant bills. And the Britishare losing their traditional reticence whenit comes to complaining about thestandard of food, the survey found.Nine out of 10 people said they send theirmeal back to the kitchen if they are notsatisfied. But while restaurant-goers haveno qualms about sending back theirmeals, the wine list can still faze them.Seven out of 10 people said they tastedwine before allowing it to be poured, butonly half said they would be able to tell ifit was faulty and one in five would neversend a bottle back - even if they hated it.If you are dining out with children, always check out the restaurant’s menuoptions for younger members of thefamily. All too often they just offer burgers ornuggets and chips when really manychildren are willing to try more grown updishes.A good idea to get them used to eating avaried diet is to visit a carvery and allowthem to choose their own meat, potatoesand vegetables, of which there is usually agood selection.

■ WAITER: Check out the appearance of the waiterwhen you dine out. He or she should be clean andtidy with a pristine outfit

Restaurants

Every good restaurant should beabout a f̀ine dining’ experienceTHE phrase `fine dining’ conjures

up an image of an immaculatewaiter with white gloves serving

equally divine food. That’s ideally how we would all like to bewined and dined. Unfortunately day to daylife is far removed from such a perfect worldand we usually dine out in a much morerelaxed world in the casual surroundings of avillage restaurant, a local pub etc.If you've ever been a dinner guest in arestaurant, you'll know a good dining roomisn't all about the food they serve!A place where you and your guests should beable to relax, unwind and feel at home, thedining room of any establshment is animportant part of the overall experience. As such it deserves a bit of attention, so ifyour entertaining space is looking a bit sorryfor itself, it could be time for a revamp to tiein with new attention to detail in the kitchenitself.Restaurant owners need to ask themselveswhat type of 'look' they want to create. Is itaimed at families, couples or groups ofpeople. Ideally it should be able to adapt toany use.The decor of the room should reflect the typeof atmosphere that you would like to create.Key trends for restaurants at the momentinclude whites, shabby-chic wood, farmhousetables with eclectic mismatched chairs andbenches, along with black gloss and chunkydark and oak woods remaining popularfront-runners.It's a good idea to take into accountfunctionality and practicality as well. Ifchildren are regular visitors, then opt forfurnishings which won’t easy mark or spoil.Lighting is also crucial, especially asrestaurants are frequently used at night.A stylish pendant or low-hanging chandelieris ideal, plus downlights with dimmer switchesare an easy way to create that cosyatmosphere.Add to this a scattering of candles (notscented, you don't want it to affect the aromaof the food) and the room's complete. When it comes to picking a colour scheme, deep reds, terracottas, spicy oranges andearthy browns are said to stimulate theappetite, plus are an excellent way to create asuitably intimate and relaxing mood.If you're nervous of using strong colours, however, opt for one accent wall with theremaining surfaces a neutral shade like cream, ivory and beige.Of course when all this complete, keep itspotlessly clean for the real `wow’factor.

■ AMBIENCE: Restaurants create the right atmosphere for successful dining experiences

A world ofchoice right onthe doorstep

You can virtually eat your wayaround the world in Huddersfield, whether you are just looking for a

quick snack or prefer a leisurely dinner. This is a town which boast restaurants to suit alltastes – from Mexican, Italian and Indian, toChinese and Thai. When it comes to restaurants in Huddersfield, it’slike having the world on your doorstep. If pasta gets your tastebuds tingling there are lotsof restaurants which serve up your favouritecuisine. Many of the pubs and restaurants incorporate amix of different cuisines and even cater for thoseof us who are on special diets – so that there issomething for everyone – ideal for familyget-togethers or celebratory meals when tastesare bound to differ. For those special occasions, there are lots ofsmaller restaurants offering a more intimateatmosphere. It’s not just in the town centre either where goodrestaurants and bars attract customer.Huddersfield has a wealth of great eateries in theoutlying areas around the town which are wellworth discovering.

Cafes and takeaways

■ COFFEE CULTURE: The demand for coffee culture continues to grow in the UK

Coffee culture and takeawaymarket continues to grow

■ FAVOURITE: What’s your choice? Enjoy both fresh food and coffee from the local cafe ora takeaway as a special treat from cooking the evening mealIN recent years we’ve become a

nation of coffee lovers and coffeeculture is everywhere.

Coffee shops have been defying the recession bysnapping up yet more space on Britain’s highstreets as figures suggest the daily cup of coffeeis one treat consumers cannot do without. While retailers have been falling by the waysideamid the recession, recent research showedgrowth in the overall number of coffee outlets inmajor UK cities more than doubling to 7% inthe past year. However they all need to remember that thelocal coffee shop or national chain still needs tomaintain its hygiene standards. The six largest coffee chains in the sectorincreased their space by 47% in the year toSeptember 30, the study from The Local DataCompany showed. The figures are surprising given the expectationfor recession-hit consumers to ditchdiscretionary spend. The boom in coffee shopculture in the years running up to the economiccrisis saw UK town centres almost taken overby coffee chains, often with more than one ofthe same brand in the same high street.Sam Hart, an analyst at Charles Stanleystockbrokers, said consumers have instead beenfar more worried about splashing out on bigitems, such as televisions and sofas, than lowvalue everyday treats.“It’s no real surprise that coffee shops have held

up well in the recession – we’re talking about apretty low average spend,” he said. “There’s alsoa slight cultural change going on – a shifttowards the coffee shop culture whereconsumers expect higher quality standards ofcoffee.”Coffee shops are not just places for workers toget a quick caffeine hit or to maintain contacts, but for teenagers, families and pensioners tomeet – in many places they have replaced thepub or the post office as the hub of thecommunity. The continued growth of small and large firmsalike shows that the coffee culture which hasdeveloped in the UK in the last decade is not atrend but is definitely here to stay.”It is a view backed by research firm AllegraStrategies, which predicts the wider market isalso in line for further growth as Britain’sappetite fails to subside. It expects the UK coffee shop market is due tohit £2bn in consumer spending.

Takeaways still as popular as ever

The demand for takeaways continues to grow aswe all enjoy a treat and a break from cooking. Before you order your favourite, whether it’spizza, Indian, Chinese or fish and chips, remember to check out the hygiene rating andmake sure all is well with your local favourite.

Pubs, cafes and takeaways

Enjoy a takeawaySOMETIMES it’s nice to treat

yourself to a takeaway, perhapsat lunchtime for a change.

Whether you’re just having a cappuccino or atasty take-away meal, you need to know thateverything has been prepared in a cleankitchen.Walk into a cafe or fast food outlet and youneed to be assured that all’s well behind thescenes.Even small local cafes and takeaway outletsnow have a rating for their premises to help

people identify the best places. The star rating reflects the level of cleanliness, good food safety practice and management andit helps potential customers make an informedchoice. Those rated five stars are excellent and thosewith no stars indicate a very poor compliancewith food hygiene. So even if you’re just having a takeaway coffee, check out the star rating first. You need to be sure that the outlet in questionhas a spotless kitchen and the very best hygienepractices.

Check out the ratingSUMMER’S on the way and it’s a

great time to enjoy a cool pint atyour local pub.

Alternatively enjoy a visit to your local gardencentre, have a wander round and then call for acuppa or lunch at the on-site cafe or restaurant.Local establishments such as pubs and garden

centres are also inspected to ensure theirhygiene standards are up to the mark.Whether you opt for a traditional home madepie or steak and chips, there’s something verycomforting about traditional pub grub.Even though traditional favourites are oftengiven a contemporary twist, you can still enjoybangers and mash, fish and chips, gammonand egg and much more in the cosysurroundings of a traditional pub.So always check the rating at your local beforeyou decide to dine out and tuck in to yourfavourite grub.A good landlord will always make sure hispumps are ultra clean as well.Likewise the garden centre cafe or restaurantis also under the spotlight today to ensurecleanliness and hygiene is the key. Many offer full meals as well as coffees, teasand snacks and there is usually a great choice.Today’s garden centres are often destinationvenues, ideal for an afternoon out combinedwith a delicious lunch. The cafe is a very important section of thegarden centre so enjoy a visit when you can.

Children’s nurseries and venues

Check thehygiene rating

before you booka major event

WHEN you’re choosing a venuefor a special occasion, youwant a five-star establishment.

Whatever the occasion - a wedding, christening, birthday party etc - you need to know the placeis spot on.There’s no time for any half measures. As wellas top class food, you need to know that thevenue’s kitchen is spotless and that your guestsare going to fully enjoy their food and thewhole event.Numerous local venues in and around theHuddersfield area have been assessed for theircleanliness and hygiene - so make sure that youask about their rating when you first enquireabout a booking. However busy a kitchen is, one of the mainrules of any establishment is to maintain aspotless kitchen. After all the main thing you want is for yourguests to enjoy themselves. You don’t wantanyone to be ill afterwards because of a foodhygiene issue. When you’re booking a venue for a specialevent, it’a always worth asking around amongyour friends and colleagues, for anyrecommendations. After all, this is the best form of advertisingand a recommendation is sure to allay anyfears.Catering for large numbers is never easy andsome kitchens may be tempted to rush and cutcorners. However today’s exacting hygiene standardsmean that a visit from the health inspector isalways a possibility. Therefore, in this fiercely competitive industry, venues have to be at the top of their game tosucceed.Choose wisely and ask to see their hygienerating before making the final decision.

Pic Andrew Teebay.Story Ben Schofield.Tuna sandwichstory...........Look after

little tummiesYOU trust your local nursery to

look after your child while youare at work.

Remember however you need to be able totrust the kitchen team to be thoroughlyhygienic and look after little tummies as well.Children’s tummies are easily upset and thelast thing you want is for your child to comehome from nursery ill.Today all good nurseries have top hygieneratings which ensures they work to strict foodpreparation rules. For many children, eating at nursery school(pictured left and above) is often one of theirfirst social eating out occasions - and you wantthem to remember it for all the right reasons. When you enquire about a nursery place foryour child, ask to see the kitchen and askabout the menu provided. Is there fresh food prepared on the premises? Is there plenty of fresh fruit and vegetables? Are the snacks healthy?Ask about the time that food is served andwhere the food is sourced from.Today’s nurseries have to be the same highstandards as local restaurants, pubs, cafes etcand you need to be happy with your choice. Some children spent many hours at nurseryand eat two or three times while they are there.Make sure your choice is a good nursery witha spotless kitchen and reputation. Then youcan go to work with full confidence your childis in good hands.

■ CARE: Compliment good quality residential care with a five star top class hygiene rating

Five star care for elderlyYOU’RE looking for nursing or

residential care for an elderlyrelatives - and one of the most

important considerations is hygieneand food preparation at the home inquestion. As well as thinking about the overall care, youalways need to carefully consider the catering, especially if your elderly relative or friend hasspecial dietary needs.Good nursing and residential homes will beused to catering for special requirements suchas vegetarian choices. They will also be accustomed to elderly who arediabetic or coeliac (suffer with wheatintolerance).Elderly people are especially vulnerable toillness and infection so kitchens need to bespotless to guard against any problems. Many local establishments now have five starratings but it’s always worth checking when yougo for an initial visit. As well as looking at bedrooms, main socialareas and outdoor provision, ask to look at thekitchens and ask about their rating so you arereally sure about your choice.Elderly people generally enjoy their food andmeal times are social events in any care homeand a great time to enjoy with friends.A spotless kitchen is essential for any carehome so take a look when you first approach ahome.A good care home should also display itshygiene rating so you can easily see it at aglance.

Your butcher and bakeravailable in local villagesYOUR local village is normally

home to a good butchers andbakers, a source of great fresh

produce.Following the recent horse meat scare, localbutchers are enjoying a revival of interest intheir fresh meat and shoppers are turning theirbacks on supermarket meat and fast foodoptions in favour of freshly sourced meats.Local butchers can tell you exactly where yourmeat is sourced from and it is this factor whichis encouraging more shoppers to return to theirlocal butcher. They want to know that the meat on their platehas not travelled for miles before reaching theshop, and also that it has come from areputable supplier. As with any other food outlet, your localbutcher is subject to stringent hygienestandards to check out your local five staroutlet. Most villages also have a top class bakery, making it the first choice for fresh bread, sandwiches, pastries and cakes.Top hygiene standards always apply here too toensure that all produce including cooked meats, breads, salad for sandwiches and hot snacks arealways freshly made in hygienic surroundings.Your local bakery is a perfect place to call infor a healthy sandwich to enjoy in your lunchbreak. You might even be tempted to treatyourself to a cake or a pasty to go with it.Before you purchase, check out the hygienerating which should be displayed in the windowof any local shop.
