5 PALEO BANANA BREAD RECIPES TO DIE FOR

1) Paleo Banana Bread

Ingredients Cup Coconut Flour Cup Almond Flour1 cup very ripe banana mashed well with a fork (2-3 medium bananas) cup butter melted + extra butter unmelted for greasing cup cacao nibs teaspoon cinnamon teaspoon baking soda teaspoon no additive liquid stevia or cup honey 4 eggs teaspoon vanilla extractpinch of salt

InstructionsPreheat the oven to 350 degrees and grease a 8.5 x 4.5 loaf pan with butter and place a cut bit of parchment paper that fits in the bottom of the loaf pan inside it flat on the bottom. In a medium sized bowl combine the coconut flour, almond flour, cinnamon, baking soda, cacao nibs, and pinch of salt and mix with a fork to reduce any clumps until thoroughly combined. In a small bowl add eggs, vanilla extract, stevia or honey and whisk then add mashed banana to the egg mixture and whisk more until well combined. Pour the liquid ingredients into the dry and stir with a spoon until thoroughly combined then add melted butter and continue stirring until well incorporated. Spoon all of the batter in your greased loaf pan and spread it out evenly with a scraper and shape it in any way you want (specifically in the shape of a loaf so that it rises like that) Place in the oven for 40-45 minutes or until the center is pierced with a toothpick and the toothpick comes out clean.

2) Paleo Strawberry Banana Bread

Ingredients3 organic ripe bananas, mashed2 Organic eggs2 tsp baking powder cup chopped pecans1 cup almond meal tsp baking soda cup strawberriescoconut oil tsp cinnamon

InstructionsPreheat oven to 350 degrees and grease loaf pan with coconut oil

Combine the baking powder, almond meal, strawberries, baking soda, cinnamon, bananas and eggs and mix well.

Add chopped pecans, mix and pour into the loaf pan.

Bake for 45 min or until toothpick comes out dry

Let bread sit for 10 min and remove to completely cool

Ingredients4 bananas (2 1/2 cups mashed or 575 grams)4 eggs1/2 cup (140 grams) almond butter (or nut butter of choice)4 tablespoons coconut oil, melted1/2 cup (75 grams) coconut flour1/2 teaspoon cinnamon1 teaspoon baking soda1 teaspoon baking powder1 teaspoon vanilla extractpinch of sea salt6 oz. dark chocolate, chopped

InstructionsGrease one 9"x5" loaf pan (or 8"x8" square pan, which is what I used) and preheat the oven to 350F.

In a large bowl or mixer, combine the mashed bananas, eggs, coconut oil, vanilla extract and nut butter until fully combined. Add the coconut flour, cinnamon, baking soda, baking powder, and sea salt to the wet ingredients and mix well. Fold in the chocolate chunks. Pour the batter into the prepared pan and spread it evenly. Bake in the preheated oven for about 40 minutes if using a square pan, and 50-60 if using a loaf pan. A toothpick inserted into the center should come out clean. Remove from oven and allow to cool on a wire rack for about 1/2 hour. Flip out onto a cooling rack to finish cooling.

4) Paleo Banana Bread

IngredientsFor the banana bread:

4 medium bananas (about 1 pound/455 grams)4 eggs cup ( stick/50 grams) grass fed butter, melted cup (125 grams) almond butter cup (60 grams) coconut flour1 teaspoon baking soda1 teaspoon baking powder1 teaspoon vanilla extract pinch of saltFor the swirl:

2 tablespoons grass-fed butter2 tablespoons ground cinnamon cup Enjoy Life Mini Chocolate Chips 1 tablespoon organic honey

InstructionsPreheat the oven to 350F (175C). Grease a 9-by-5-inch (23-by-12-cm) metal loaf pan and line it with parchment paper. Combine the bananas, eggs, butter, and almond butter in a food processor or mixing bowl and mix well until the ingredients are well blended. Add the coconut flour, baking soda, baking powder, vanilla, and salt and mix together well. In a double boiler over medium-low heat, mix together the swirl ingredients until the chocolate has melted. Pour the bread batter into the prepared pan and spread it out evenly. As soon as you pour the batter, pour the chocolate swirl directly on top and use a knife to swirl the chocolate throughout the loaf pan. Bake for 45 minutes or until a toothpick comes out clean when inserted in the middle. Remove from oven and let cool in the pan for 15 minutes before serving

5) Coffee Cake Banana Bread

IngredientsFor the bread:

3 brown bananas, mashed cup maple syrup1 teaspoon vanilla extract3 eggs cup almond butter cup coconut flour teaspoon baking soda teaspoon baking powder1 teaspoon cinnamonpinch of saltFor the toppings

4 tablespoons (1/4 cup) grass fed butter2 tablespoons coconut sugar2 tablespoons almond flour1 teaspoon cinnamon cup pecans, crushed

InstructionsPreheat oven to 350 degrees. Grease an 8.54.5 baking dish with oil then line the middle with parchment paper. It will make it easier to remove from the pan without it coming apart. In a large bowl, mix together bananas, maple syrup, vanilla extract, eggs, and almond butter. Then add coconut flour, baking soda, baking powder, cinnamon and salt and mix well. Pour batter into baking dish. Place on a baking sheet. In a small bowl, add butter, coconut sugar, almond flour, cinnamon, and pecans. Use your hands to mix the toppings together. Place chunks of the toppings all around the top of the banana bread mixture. Place in oven to bake for 50 minutes. Remove from oven, place on cooling rack and let rest for 5-10 minutes before cutting and serving.
