3 tbsp olive oil1/4 cup chopped onions3 garlic cloves, minced1 cup dry split peas2 carrots, diced7 cups of vegetable/chicken broth2 cups spinach, chopped1 tsp turmeric powder1 tsp cumin powder1 tbsp coriander, toasted and groundSalt and pepper to taste
Split Pea and Spinach Soup
Directions:
• Heat the oil in a large pot and then add the onions.
• Once they turn slightly pink, add the garlic and let it cook for a minute.
• Put in the split peas, carrots, salt and pepper.
• Combine well with constant stirring.
• Pour in the broth. Cover and cook for 30-40 minutes, till the carrot and peas turn soft.
• You may need to check the pot after 20 minutes to ensure that there is enough water.
• Adjust the quantity of liquid as needed.
• Add the spinach and continue cooking for 5 more minutes. Serve with a portion of rye bread.
Asparagus and Baby Carrots with Lemon Sauce
Ingredients:
• 1 bunch of asparagus, about 250 grams, each stalk cut into thirds)
• 200 gms baby carrots, cut into halves lengthwise)
• 1 lemon
• 1 tbsp honey
