Welcome to the 2015-16 Suite Menu for the University of Louisville Cardinals at KFC Yum! Center

We’re thrilled to have the opportunity to host you and your special guests here at the KFC Yum! Center. You’ve made a terrific entertainment choice, and this year is going to be especially fun here in Louisville.

This season, our new Suite Menu features a number of delicious additions and changes that are sure to be popular with your guests. From fan and regional favorites to special desserts, everything we offer is carefully sourced and prepared for great taste and super good times!

On behalf of Centerplate’s entire team of hospitality professionals here at the KFC Yum! Center, we are delighted to help you host a successful event. We are experts in all aspects of event planning, and we’re 100% dedicated to making it smooth and easy for you to enjoy entertaining your guests.

Make It Local

Some of your favorite local Chefs will be presenting their signature dishes during designated games. In conjunction with the KFC Yum! Center, Centerplate staff and our own Executive Chef, we will deliver a Chef ’s signature dish to your suite. Don’t be surprised if you receive a personal visit from one of the Chefs themselves!

Each signature dish serves approximately 16 guests and must be ordered at least five (5) business days prior to the event. Details of the specific menu and featured chef will be announced via email prior to the event and can be ordered by contacting your Catering Sales Manager.

Chef Donna HunterExecutive Chef, Centerplate at The KFC Yum! CenterStudied at Kentucky Technical College; her large venue experience was

gained through the Historic Brown Hotel and Churchill Downs (Let’s not forget Grandma’s kitchen). Now Chef Donna oversees the home of the Louisville Cardinals. Events include: Serving the Queen of England, PGA Tour, NASCAR and NCAA Big 10 Championships

Chef Harold BakerExecutive Chef, Gary’s On SpringChef Harold began his career at 14 in Minneapolis. “I truly love my craft. I try to stay creative so I don’t get

burned out. My lifetime dream became a reality. I keep the dream alive every day.”

Chef Michael CrouchExecutive Chef, Bistro 1860Trained in traditional French Cuisine and honed his skills at various respected Louisville

restaurants. Featured in numerous local and national magazines/publications including: Wine Spectator, Esquire, Bon Appetite, and the Food Network. “Some people specialize in a particular cuisine, I specialize in food.”

Chef Allen HubbardExecutive Chef, Martini’s Italian BistroChef Allen, a graduate of Sullivan University Culinary Arts 1994,

trained under Agostino Gabriele of Vincenzo’s for 13 years. It could be a surprise to many, “I love to travel and eat…”

Chef Dallas McCartyExecutive Chef/Partner, Marketplace RestaurantStudied at Johnson and Wales University. Was featured at the James Beard House in New York City four times and is a fixture in the local culinary scene.

Specialties include traditional southern dishes and Italian cuisine

Chef Josh MooreExecutive Chef/Partner, Volare RestauranteAn Executive Chef and an Executive Pastry Chef. A rare combination! Josh, worked at many prestigious restaurants throughout the area including Vincenzo’s.

He has cooked for many special guests such as Muhammad Ali, Robert De Niro, Al Pacino and the Prince of Monaco. Chef Josh also owns a 10-acre working farm where he proudly raises many items used on his menu at the restaurant.

Chef Travis RockwellExecutive Chef, LouvinoA graduate of Sullivan University of Culinary Arts, Travis was named as one of the top local chefs under 30 by Louisville Restaurant Forum. He has cooked

at the James Beard House in New York City, was featured in Food and Dining Magazine, Sophisticated Living Louisville Magazine and won “Best New Restaurant” from Louisville Magazine.

Chef Patrick RoneyExecutive Chef, Oakroom at the SeelbachStudied at the Culinary Institute of America. Patrick worked as a Chef on luxury private yachts to ports of call around the globe. He was named “Best Charter Chef” by Yachting Magazine and

“Best Charter Chef of New England 2009”. Roney’s memories of his mother’s garden and fishing and cooking the day’s catch on the shores of Canada shaped his career

Chef Anoosh ShariatOwner/Executive Chef, Anoosh BistroTrained in Germany, Switzerland and the American Southwest. Anoosh was named “Best Chef Honoree” by Louisville Magazine and was featured in Food Arts, USA Today, Gourmet, Food &

Wine, and cooked at the James Beard House in New York; “Nobody, but nobody can make a plate of food both look and taste as gorgeous as Chef Anoosh Shariat.”

Chef John VaraneseOwner/Executive Chef, Varanese Restaurant & The River House (Opening in early 2016)A graduate of Johnson & Wales University, John is known for his culinary creativity as well as his dedication to cooking with the

freshest local products in his many signature dishes. He is the star and co-producer of his own TV show “Big World of Food”. John cooked at the James Beard House in New York and won “Restaurateur of the Year 2013” from the Kentucky Restaurant Association.

Craft Cocktails with Tim Laird

At Centerplate we are always looking for emerging trends in the restaurant world that we can translate into sports settings. The craft cocktail movement is one such trend that we are excited to offer to our suite clients. There’s a national movement to drink higher quality beverages that are thoughtfully prepared with the finest ingredients, and we think the trend is perfect for suite entertaining.

Created exclusively for Centerplate by America’s CEO, Chief Entertaining Officer, Tim Laird who has created thousands of specialty cocktails and is the author of two entertaining and cocktail books. Some of his cocktails are inspired by nostalgia and rediscovery, and some are pure delicious innovation, but all are terrific options for your guests who are asking more of their beverages, just as they are of their food.

All our Craft Cocktails are delivered in fresh-made batches ready to be finished and garnished by you or your suite attendant. Tim’s recipes are provided here, and by all means do try this at home as well as here at the KFC Yum! Center.

TimingWe want you and your guests to be absolutely delighted with your experience at KFC Yum! Center. We strive to make every detail as smooth and easy for you as possible. As you can imagine, it takes a little time to prepare for a party of 16 or more guests! So please place the order for your suite by 5:00pm, three (3) business days prior to each event day (or by 5:00 Tuesday for Saturday events). This gives us the time we need to take good care of you.

On the actual day of the event, the “Event Day” menu is always available until the middle of the 2nd half on Event Day. Last call for beverages is a ½ hour prior to the end of the event.

Please notify us as soon as possible of any cancellations. Orders cancelled by 5:00pm, three (3) business days prior to your game will not be charged.

The Fine Print

Game Day Suite Hours of OperationThe suites are open for guest arrival 1½ hours prior to game time and 1 hour prior for other types of events unless otherwise stated.

DeliveryWe strive to deliver your order to your suite with premium freshness and with highest quality. Some items may be delivered after you or your guests arrive to ensure freshness. If you have a specific delivery time, we are happy to accommodate your request. Please call Centerplate at 502.690.9066 to make delivery arrangements. Due to food safety precautions, we remove unconsumed food after three hours of exposure. Special OrdersIn addition to this Suite Menu, the Executive Chef and his team will be pleased to create a special menu for you. Any special needs you or your guests may have, including food allergies, can be accommodated when ordered five (5) business days prior to your event. Centerplate has eliminated the use of trans fat in all food service offerings.

Payment InformationPayment for your suite food and beverage may be made using MasterCard, Visa, American Express, Discover Card or Cash. When placing your order, please provide us with the name of the person(s) who have authority to place additional Event Day orders and who have signing authority. A 21% service charge and all applicable sales tax will be included.

Suite StaffingA team of Centerplate Suite Attendants staff the Suite Level. It is their responsibility to ensure that your food and beverage orders are delivered, and to assist you on event day. Additional Private Suite Attendants and Bartenders are also available for a fee of $150.00 plus 6 % sales tax per attendant. Please let us know if you need private attendants or bartenders at least three five (5) business days prior to the event.

Service ChargeA “House” or “Administrative” Charge of 21 % is added to your bill for suite service, which is used to defray the cost of providing the service and other house expenses. No portion of this Charge is distributed to the employees providing the service. You are free, but not obligated to add or give a gratuity directly to your servers.

Suite Holder ResponsibilitiesThe suite holder is requested to identify the responsible administrator for the suite. The administrator will serve as the primary contact for all food and beverage issues. All communication regarding food and beverage orders will occur between the administrator and Centerplate Food and Beverage representative.

Service of AlcoholIt is strictly prohibited, by law, to bring alcoholic beverages into (or remove them from) the suites from outside the KFC Yum! Center. To maintain compliance with rules and regulations set for by the local laws, we ask that you adhere to the following:

• It is the responsibility of the Suite Holder or their representative to monitor and control alcoholic consumption in the suite

• Minors, by law, are not permitted to consume alcoholic beverages

• It is unlawful to serve alcoholic beverages to anyone who appears to be intoxicated

• No passing alcoholic beverages from one suite to another or to general seating

• By law, alcoholic beverages cannot be brought into or taken out of the KFC Yum! Center
